    Pulled Pork Stuffed Portobellos
    Hello, Summer… Tis the season for Summer BBQ’s and all kinds of summer fun! Pool parties, no school, vacations, swimming, and the sunshine!

    Pulled Pork is like the meal that keeps on giving! We love pulled pork and of course, all the leftovers. I usually double or triple the amount of pulled pork I cook so we have some good leftover! Pulled Pork freeze so well and it’s an easy great meal to pull out for those days your in a rush.

    That’s exactly how I came up with this Pulled Pork Stuffed Portobello Mushrooms recipe. With the leftover pulled pork and BBQ Sauce we had, I stuffed Portobello Mushroom Caps for an exciting healthy twist on Pulled Pork sandwiches but without the bread! They came out amazing! And it was a quick, easy meal!

    This dish is also a fabulous appetizer to serve at a BBQ or Party. Paleo, Low Fat, Whole 30, Gluten- Free, and Low Carb!

    Pulled Pork Stuffed Portobello Mushrooms, Recipe, Tutorial, Paleo, Gluten-Free, Whole 30, Low Fat, Low Carb, Dinner, Supper, Main Dish, Thank You Honey,

    What You Need:

    Large portobello mushroom caps
    1/2 cup to a 1 cup of Pulled Pork
    2 tbsp of Extra Virgin Olive Oil per Portobello mushroom cap
    Salt & pepper

     

    Pulled pork BL

    How To:

    Wash and clean the Portobellos.
    Remove stem.
    Pre-heat the oven to 350.
    Place the portobello caps face up on a baking sheet, lined with Parchment paper.
    Drizzle the portobello caps with Extra Virgin Olive Oil and salt & pepper, then flip over and drizzle the tops.
    Roast in the oven for 20 mins- 30 depending on the size.
    Heat up the pulled pork
    Once the Portobello caps are done roasting stuff the caps with about a 1/2 a cup to 1 cup of pulled pork.
    Top with BBQ sauce or coleslaw.
