I scream, you scream, we all scream for ICE CREAM! Don’t you remember singing that song as a kid? Or maybe you still do? Or you sing that song to your own kids!
When you hear that song doesn’t it seriously, make you feel like you are 7 years old again? When you use to hear the ice cream truck’s bells roll through your neighborhood. I remember hearing the ice cream truck bells, then running inside the house to my parents, to ask for some money for ice cream. They would only give me money if I promised to only buy “ice cream” and “no crazy dye shit”. Meaning no colored ice pops, Rocket Pops, Character Pops, or whatever crazy dye colored sugary item the ice cream man was selling. I was a good girl. I listened.
I was always excited when my parents gave me a few bucks and said, “get them something too”! I would get so excited! It was like I hit the ice cream lottery or jackpot. I could pick out something for them, and of course, I would get to try it! Then I could use the extra change I received back from the ice cream man and use it to buy a Ring Pop! Very exciting stuff!
I would quickly run around the house looking for my flip- flops then give up. And then just run out the door barefoot and run up to the top of the driveway. Standing outside at the top of our driveway with my money in hand, anxiously waiting for the ice cream man to pull up to my house. I remember always having the hardest time deciding on what delicious ice cream treat I would go for, something chocolate or fruity. I would always ponder my choice like it would be the only time I would get ice cream.
It was a big decision back then. I would ponder it. The ice cream man came around only once a day and sometimes it was not even every day. If I choose a bad ice cream, I would not eat it and then I would have to wait a few days perhaps to get a different one. It was not like I could pick an ice cream, take a bit, and give it back if I did not like it. It was a huge decision and I had to choose wisely. I always wanted an ice cream that I would love, and the one that made my brothers drool and beg for bites of. I only had one shot to get it right before the ice cream truck drove away.
I would look at that board, carefully studying each picture of ice cream, trying to decide. Let anyone else go first. Then I would have my turn. “I’ll have the Chocolate Éclair, please”. I always would end up picking old faithful. It was something about those delicious chocolate crunches that had me every time. “The Chocolate Éclair”. It was an ice cream bars that had the chocolate crunchies on the outside, then a section of vanilla ice cream, with chocolate ice cream in the center around the popsicle stick. It was the perfect combo of ice cream, and not too sweet. Every bite was perfect. Pure Heaven on a stick…
Can you tell I’m a pure sucker for chocolate crunches? Ice Cream Cupcakes were inspired by my trips as a kid to the ice cream truck. Trying to relive my youth and make the ice cream a bit better. I wanted to take my favorite childhood ice cream; I would get from the ice cream truck, and make it better!
Nowadays, those “Chocolate Éclair” ice cream bars are different and they do not look or taste that same way as they use to when I was a kid. Maybe I just grew up. Either way, I wanted my Little Dude to experience that same kind of ice cream bliss and excitement, I use to experience as a child every time I visited the ice cream truck. Little Dude may not hear the sound of those ice cream truck bells, or may not have that experience of that first sight of seeing the ice cream truck pull up, but maybe he will experience ice cream bliss and excitement with seeing the sight of these Ice Cream Cupcakes! Each time he digs into them with that first bite!
What You Need:
1 gallon of your favorite brand of chocolate ice cream
1 gallon of your favorite brand of vanilla ice cream
1 box of chocolate wafer cookies
1/2 jar of hot fudge
1 container of cool whip
Red, white and blue Sprinkles
Muffin pan
24 paper Cupcake liners
***Serving size 24 Ice Cream Cupcakes
How To:
Line the cupcake pan with paper cupcake liners (The foil ones stick.)
In a Ziploc bag add chocolate wafer cookies.
Smash them up to make small bits of wafer cookies.
Mix in smashed chocolate wafer cookies with hot fudge and set aside.
Put 1 tbsp (heaping) of chocolate ice cream on the bottom of the muffin cup liners.
Mash ice cream around to cover the bottom.
Then on top of the chocolate ice cream add a layer of chocolate crunches about 1 tsp.
Mash the crunches around to cover over the chocolate ice cream.
On top of the chocolate crunches, add a layer of vanilla ice cream.
Finally, add a layer of Cool Whip.
Then decorate with Red, white and blue sprinkles for a Memorial Day Dessert Treat!
Refrigerate for 24 hours.
Peel off the cupcake liner and serve.
***Work quickly because ice cream starts melting quickly!

1. Any recipe that begins with a gallon of chocolate ice cream and a gallon of vanilla ice cream will be more popular with my kids than Zach, Cody, and all the big-haired, tatted-up boys in One Direction, combined.
2. Seriously, what do you make after something like this? “Aw, dad. Double-chocolate chip cookies and hot cocoa on top of a birthday cake with jelly beans – again?” Pales in comparison.
