    Spring time is finally here! Flowers are blooming and temperatures are starting to warm up. Spring time in Florida means only one thing to us… Berry Season. Fresh berries are in season and one of our favorite family springtime activities is to go strawberry picking together as a family.

    There is nothing like eating a strawberry right off the vine. It’s fresh and deliciously good. We did manage to bring home a bunch of strawberries despite how many we ate while picking.

    With all these delicious berries hanging around, I decided to make a fresh fruit tart for dessert. Little Dude’s favorite things fresh fruit, granola, and whipped cream. I used granola for the crust to give my dessert a boost of nutrition and to feel a little less guilty for eating dessert.

    Granola Crusted Fruit Tart

    What You Need:

    2 tbsp of honey

    2 tbsp of butter

    4 cups of vanilla pudding

    ½ cup of sliced strawberries

    ¼ cup of blueberries

    3 cups of Quaker® Real Medleys SuperGrains Blueberry Pecan Granola (I love this granola! It is a blend of seven super grains (Whole Grain Oats, Whole Grain Wheat, Flaxseed, Red Quinoa, Sunflower Seeds, Amaranth and Barley), fruit, nuts, and ALA Omega-3.

    Whipped Cream (optional)

    How To:

    1. Preheat the oven to 325 degrees.

    Add the Quaker® Real Medleys SuperGrains Blueberry Pecan Granola to the food processor and pulse until becomes a crumb like consistency.

    In a mixing bowl combine Quaker® Real Medleys SuperGrains Blueberry Pecan Granola, honey, and butter.

    Transfer the mixture to a tart pan.

    Press the mixture evenly along the sides and bottom.

    Bake in the oven at 325 degrees for 20 minutes.

    Remove from the oven and let cool completely.

    Gently remove crust from the pan.

    Fill the crust with cooled pudding.

    Place in the refrigerator for 1 hour.

    Wash and trim strawberries & blueberries.

    Top the tart with strawberries and blueberries.

    And serve with a dollop of whipped cream.
