    Banana Muffins
    It’s been one of those exciting weeks! My Little Dude is growing up before my eyes. My baby is growing and getting all independent in a blink of an eye! He has mastered climbing out of his crib! Conveniently, he can only climb out not back in once he is out. Makes for some early mornings and late nights! I have to hand it to him; I’m kinda proud of him for figuring it out & figuring it out safely! The big boy bed has been ordered, and we should have it in a few days (thank goodness).

    This morning Little Dude and I made some Banana Muffins! I love these muffins! They are amazing, healthy, Paleo, Gluten- Free and easy to make! Lucky for me, I had a unique & cute Little Dude helping me! Little Dude loves to help and did a great job stirring and pouring ingredients into the mixing bowl. Don’t forget to give your little ones a chance to help. Chances are you both with have a blast! It can definitely get messy, but those special moments with your little ones are way worth it!!

    Banana Muffins

    What You Need:

    3 very ripe bananas
    3 cups almond flour
    3 eggs
    1 1/2 tsp baking soda
    2 tsp vanilla
    1 1/2 tsp cinnamon
    1/2 tsp nutmeg
    Pinch of salt
    1/4 cup of coconut oil
    Optional, 1 handful of dark chocolate mini chips, (I use vegan, Paleo, gluten-free) or walnuts

     

    How To:

    Preheat oven to 325 degrees
    12 cup muffin tin pan of 24 mini muffin pan.
    Spray muffin tins with coconut oil cooking spray and set aside.
    Mash bananas in a large mixing bowl.
    Melt coconut oil.
    Add to the bowl flour, baking soda, cinnamon, nutmeg, and salt.
    Add eggs, vanilla, and coconut oil to the bowl.
    Mix together. If your mixture is a little dry add a few drops of water to moisten it.
    Optional~ Fold in chocolate chips or walnuts into the mixture.
    Scoop mixture into muffin tins.
    Bake 325 degrees for 30 minutes 12 regular muffins/ 12- 15 minutes mini muffins.

      I don’t like bananas but I love a good banana muffin. These look so good! Really moist and flavourful. I’ll have to give them a try.

      I tried making banana muffins before but they turned out to be dry and chewy. I don’t know what I did wrong because I followed the recipe to the letter. Your muffins look so soft and moist, I will try making some this weekend. Hopefully I get it right this time.

      Banana muffins and bread are always a hit in my house! I have used them as a yummy breakfast, or a snack to send to my kids at school. This seems like a great recipe!

      I love banana muffins and banana bread. This looks great. I can’t eat straight bananas anymore as I’m allergic, so making them into muffins or banana bread is probably the only way I can enjoy them still.

      I love muffins. These banana pales muffins sound like they are really tasty. Ive never tried making paleo baked goods.

      I love anything banana which is rare. I know so many people who are so adverse to banana flavor. This muffin would be a hit with me!

      I love banana muffins! This is such a great recipe for gluten free. My youngest has ADD and I’m always looking for yummy gluten free recipes that feel like a treat.

      Banana muffins are the perfect thing to bake when you have those couple of bananas that are just a little more ripe than the other bananas and you just don’t wanna make another smoothie. *smile* Seriously, banana muffins or banana bread are so easy to make and oh so tasty.

      Can’t go wrong with a great tasting Banana muffin. Wonderful for snack time, grab and go breakfast. I want one with a cup of hot chocolate.
