    Zucchini Boats

    Zucchini Boats! Maybe a new favorite! Lately, I’m all about stuffing veggies with veggies and why should zucchini be left out. So zucchini boats!  These delightful little treasures are so fun to make, and the possibilities of what you can stuff them with are endless. I’ve been having a blast experimenting with different items to stuff them with! So far my favorite has been sautéing onion, garlic, and shiitake mushrooms and a sprinkle of Parmesan Cheese! Great healthy recipe for many lifestyles or diets vegetarians, or Paleo’s or vegan, just omit Parmesan! Super easy and good for you too.

    Zucchini Boats

    What you need:
    4 zucchini
    1 onion
    5- 6 shiitake mushrooms
    1 tbsp chopped garlic
    Parmesan cheese (optional/ omit if Paleo, vegan)
    1-2 tbsp olive oil

    How to:
    Cut zucchinis in half long ways.

    Scoop out seeds and place to the side.

    Zucchini Boats

    Chop onions, shiitake mushrooms, and garlic.

    In a pan, add olive oil and sauté garlic, onion, shiitake mushrooms and the scooped out seeds of the zucchinis.

    Cook till onions are translucent.


    Then stuff mixture into the zucchinis.

    Optional~ Sprinkle the tops of the Zucchini Boats with Parmesan Cheese.

    Grill on the BBQ for 15- 20 minutes or bake in the oven at 350 degrees for 20-25 minutes.

    Zucchini Boats

    Serve as a side dish with your favorite entree!

      I bet I could get the kids to eat these. I’m always looking for veggie recipes I think they’ll love. I’m certain I would love them. Such a unique and fun recipe.

      Oh wow. Shiitake mushrooms and garlic together on a zucchini. It made my mouth water with just the thought of this delicious dish! So easy to make and so yummy. Adding this to our meal plan.

      Oh now this is a unique idea, I would never have thought of making anything like this out of zucchini’s but I bet it is delicious, so full of different flavours.

      Ooo this is the perfect way to have zucchini. I normally don’t like it, but I’m pretty sure I’d enjoy it like this.

      This would be a tasty alternative to high calorie stuffed potato skins. I would fill these with chicken or turkey salad and I bet they would be super yummy.

      Oh your zucchini boats look absolutely delicious and definitely something my family would eat (which is a huge plus). These are incredibly creative and I would love to try them out.

      Zucchini is one of the few veggies that I actually like (I’m a super picky eater). I love finding new ways to eat it! This sounds easy to make!

      Great idea to prepare the zucchini. I only cook zucchini once in a while when it is in season so I will add this in my recipe.

      Just by looking at the photo I thought these were topped with onion. Adding the mushrooms goes well with the onions. Perfect side dish to go with any type of meat.

      A friend of mine does a lot with zucchini boats. The last time I was at her house she made spaghetti in them. This one looks delicious. I will definitely try it.
