Watermelon & Mint

Watermelon & Mint
What a combination! Watermelon & Mint has become my new favorite snacks or dessert. It is refreshing, light, and packed with flavor. It’s an excellent snack or dessert for the beach, pool, or to bring to a BBQ or picnic!  It’s super easy recipe. And it’s healthy for Clean Eating, Paleo, Whole 30, Gluten- Free, Low- Fat and Ketos diets. It’s truly a crowd pleaser!

Watermelon & Mint

What you need:
1 whole Watermelon
1 bunch of fresh mint
Melon baller

How to:
Find a side of the watermelon that is a little flat, set that as the bottom, if want to serve out of watermelon.
Cut the watermelon towards the top to make a bowl shape.
Use a melon baller to scoop out watermelon into a bowl.
Pick mint leaves off the twig, wash and dry the mint leaves.
Chop mint leaves, finely (uses as much or as little Mint depending on amount/ size of the watermelon).
Mix the chopped Mint with Watermelon in a bowl, (Be careful not to overdo the Mint, you don’t want to overpowerer the taste of the Watermelon).
Place the Watermelon & Mint balls back into the hollowed out watermelon.
And serve
Voila…
Enjoy!

It’s so funny because everyone in my family is obsessed with Watermelon but I’ve never liked them. Although, I recently had Watermelon juice and it was pretty yummy so maybe I should give them a second chance (since I haven’t even tried/eaten one since I was a child!).

Watermelon and mint is such a great combo. I like it with a little lime juice myself, but it’s great as is.

  10. I can never get enough fresh watermelon during the summer! I love adding mint and feta cheese to dress it up a bit. I had some yesterday and it was delicious. Wish I had a bite or two of your watermelon and mint.

  11. Mmmm! That sounds SO good. It will be perfect for all of the summer cookouts I have planned this year!
