    Ratatouille

    Love Ratatouille! It reminds me of vacationing in France! It is one of my favorite comfort foods and I love making it. I sometimes use it as a starter for gravy! It a great winter time food!

    What you Need:
    1 Eggplant
    1 Yellow Squash
    1 Zucchini
    1 large Onion
    2 Green peppers
    2 Red Peppers
    2 Yellow Peppers
    4-6 Cloves of Garlic
    1 Bunch of Fresh Basil
    4 TBSP of Extra Virgin Olive Oil
    1 16 oz can of whole tomatoes
    salt
    Pepper
    Ratutoille
    How to:

    Chop Eggplant, Squash, Zucchini, Peppers, Garlic, and Onion
    Add 4 TBSP of EVOO to large pan on medium heat
    Add in Eggplant, Squash, Zucchini, Peppers, Garlic, and Onion
    Cover and cook for 20 minutes
    After 20 minutes add in whole tomatoes & basil, stir
    And cook for another 20 minutes on medium heat
    Reduce heat to low and cook for another 20 minutes
    Enjoy!

    Serve with pasta, bread, or use as an appetizer and serve with crackers or garlic toast

      I love ratatouille too! Recently I made caponata in my slow cooker, and I imagine ratatouille would work just as well!
