Whole- Wheat Pancakes…

Start the day off right… Sesame Street Pancakes were in full swing this AM. Big Bird, Elmo and of course Little Dude’s favorite Cookie Monster. I bought these pancake molds at William Sonoma. We love William Sonoma’s Whole- Wheat Pancake recipe. They are delish!! I changed a few things in the recipe (see below) to add in some more protein! Overall they are always a huge hit!!

I sometimes double the recipe and make them all then once they cool I freeze them and pull them out as needed for breakfast. Little Dude loves to help mix and we all love to eat them! Enjoy!!

Whole- Wheat Pancakes…
1 cup whole wheat flour
1 cup all- purpose flour
2 tsp. baking soda
1 tsp. salt
2 eggs
3/4 plain nonfat yogurt (I use Greek yogurt for extra protein)
1 1/2 cups milk (I use almond milk)
4 tbs. butter, melted
3 tbs. honey
1/2 tsp vanilla
cooking spray

In a large bowl, whisk together both flours, baking soda, & salt

In a medium bowl, whisk together eggs, yogurt, milk, melted butter, honey & vanilla until smooth

Pour liquid mixture into large bowl of flours, whisk together until smooth

Heat griddle pan over medium heat, spray with cooking spray pour batter into molds, circles.

Cook until small bubbles appear then flip over.
Serve with fresh fruit

Serving size: About 18 pancakes or 6 molds.
