    Spanakopita Bites

    Spanakopita Bites are a delicious healthy appetizer that everyone will love! Small bites of spinach and feta cheese combined in a crunchy fillo dough crust.

    What You Need:

    16 oz Frozen Chopped Spinach (thawed and squeezed out)

    6oz Block of Feta Cheese

    3- 4 cloves of fresh Garlic, (finely chopped).

    1 tsp of Dried Dill

    1 bunch of Scallions, (finely chopped)

    ¼ cups of Mozzarella cheese

    3 boxes of Fillo Dough Shell /Cups (found in the freezer section)

     

    How to:

    1. Finely chop Scallions.
    2. In a large bowl, break apart the block of Feta Cheese.  
    3. Mix in thawed chopped Spinach.
    4. Add into the spinach & cheese mixture; garlic, scallions, dried dill, and Mozzarella Cheese.
    5. Place in the refrigerator for 4 hours to overnight for flavors to blend together.
    6. Then use a teaspoon to place spinach cheese mixture inside the Fillo Dough Cups.  
    7. Bake in a preheated oven for 15 to 20 minutes.
    8. Remove for the oven and serve. They can be server hot or at room temperature.

      Yum! I usually fold them up into phyllo dough. This looks so much easier (and honestly, less messy to eat as they are bite sized.)

      I had a friend ask if I had ever made Spanakopita, as it’s was a good vegetarian meal, and I haven’t, but I love how easy these look – and I have everything except the fillo cups! I may have to make these, as I fully believe in appetizers as a meal!

      Mmmmm!! A total favorite. Hubby and I are not gluten free so I CAN make them, I don’t think the kiddos would go near them! But I’d still trade my kingdom for a GF phylo dough recipe…
