    Paleo Chili

    Paleo Chili! Classic comfort food with a customized twist! This is the healthiest, easiest, fastest chili and it tastes delish using fresh vegetables and grass- fed ground beef for Paleo! It is Paleo and Gluten- free, for vegan or vegetarian (omit the grass- fed beef).

    In our house, we all like our chili a different way of course. Stirring in meat, fresh chopped jalapeño peppers or jalapeños cut into circles changes the temperature of the chili! I enjoy spicy, hubby likes a moderate heat, and my Little Dude likes it mild and no meat, for now! The best way in our house I found to have chili is to make it vegan/ vegetarian on the milder side. Then customize it to how we each like it using fresh jalapeño peppers!  For milder chili add a few chopped jalapeño. For hotter spicier chili add some of the jalapeño circles.

    How do you like your chili?

    What you need:

    1 green pepper

    1 red pepper

    1 orange pepper

    1- 2 fresh jalapeño peppers

    1 large white onion

    2 cans of kidney beans

    1 can of black beans

    1 package of grass-fed ground beef (optional)

    4- 6 cloves of garlic

    1- 28 oz can of crushed tomatoes

    1- 2 cups of water

    1 tbsp chili powder

    1 tsp cumin

    Salt & pepper to taste

    How to:

    1.  Chop green, red, orange pepper, onion & garlic.

    2.  In a pan, on medium heat, cook grass- fed ground beef till brown, drain off any grease.

    3.  Rinse & strain beans.

    4.  In a large pot, on medium- high heat add crushed tomatoes, water and chopped vegetables, & garlic. (If you’re making it paleo add in the grass- fed ground beef). If your family is like mine cook the meat in a separate pan.

    5.  Stir in chili powder, cumin, salt & pepper.

    6.  Bring to a boil, let it boil for 3 minutes.

    7.  Then reduce heat to medium- low and cook for 45 minutes to 1 hour.

    8.  Cut 1 jalapeño pepper, cut to make circles leaving the seeds- the seeds are the hot part.

    9.  With the other jalapeño, cut it in half length ways, remove seeds and chop.

    10.  Once chili is done serve with jalapeño and fresh avocado slices.
