Vegetarian & Vegan Stuffed Peppers…

Stuffed peppers were always a favorite dinner growing up! I was always very excited to have my own pepper to eat. Since I no longer eat meat I started playing with the recipe. Substituting quinoa for meat and chili for marinara sauce. I like substituting chili in because of the additional protein from the beans.

What you need:
4 large green peppers
1 cups cooked Quinoa per pepper ( maybe more or less depending on the size of the green pepper)
4- 5 cups chili ( I freeze my chili when I make it & pull it out)

How to:
Pre heat oven 350
Clean green peppers and cut the tops scoop out seeds etc.
Mix together quinoa & chili
Carefully stuff the peppers with the quinoa & chili mixture
In a baking dish add 1/2 cup of water to the bottom of the dish
Then place stuffed peppers standing up, cover with tin foil
Bake in the oven for 45 mins
Add some chili to the top and serve
Enjoy!!!

    They look delicious! I also made stuffed red bell peppers, but with minced lamb.

    yummmm! I love stuffed bell peppers. I really need to start experimenting with quinoa more!

      Yes!! Quinoa is awesome! It takes the place of rice and has some protein. You prepare it the same way as rice too. I cook it in a rice cooker and I cook it in vegetable broth to give it some flavor! Enjoy!! Let me know how you like it!! Thanks for stopping by:)
