A few weeks out of the month hubs has to travel for work. It’s really a “work vacation” because not having to rush through a cup of coffee is a vacation in my book. Some of hubs travel include far off awesome places like Korea or Russia. Sometimes he is gone for a few days or up to 2 weeks. Hubs traveling can make our already busy schedule a wee bit crazier. I try to prepare myself as much as I can before he leaves to avoid any additional trips to the store or extra work.

Hubs will usually want to spend some time with Little Dude and want to take him to the park or bouncy place before he heads out of town. I jump on that opportunity and use that time to get myself ahead and prep for when hubs is out of town. I get all the laundry done, change out all the towels and bedding. Meal plan my meals.

On our late nights (the nights Little Dude has swimming practice) is when I sometimes struggle the most and it is when I can really use the extra set of hands to get dinner started or get Little Dude in the bath and to bed. I usually end up bring Little Dude a sandwich, carrot sticks & hummus, and a piece of fruit for dinner in the car because he is starving after swimming. 

Once we get home it’s a mad dash and it’s busy. I’m getting Little Dude  in the bath and to bed. I don’t have time to cook or eat until after Little Dude is in bed.

By the time I’m done with the bath and the bedtime routine, I’m tired and hungry. I don’t always feel like chopping and cooking. That’s where all my prep work comes in super handling. I love to make one pot meals especially while hubs is traveling. Meals that make enough for extras for lunches or for Little Dude or myself  to have for dinner the next day.

How To Meal Plan For One

  1. Look at the week’s schedule and time you have to cook. Plan out meals accordingly. Cook meals that involve lots of steps when you have more time. 
  2. If meals are very large cut serving size if needed. Remember to still leave some leftovers for lunches or a second dinner.
  3. Make one pot meals or meals that only require a few ingredients. 
  4. If possible, cook ahead of time and freeze meals if possible or shop for frozen meals.
  5. Keep grab & go snacks handy.

    What a great idea for a post! Planning dinners when I lived by myself was often depressing. This post makes it seem not so bad!!
