Black Eye Peas…

,

A New Year’s Southern tradition is to eat Black Eye Peas on New Year’s Day to welcome in the new year and bring luck and prosperity in the new year.

I usually make Lentil Soup to usher in the new year because in my family that’s was our tradition. I guess it’s a Northern thing. However, in my husbands family their tradition was to eat Black Eye Peas! They are from the South and since I want to incorporate some of his traditions and we live in the South! What a perfect New Year’s tradition to start!

I searched high and low for a vegetarian recipe all I could find were ones with fake bacon & veggie meat
Didn’t really want to use any of that processed stuff. Here is my recipe:
1 pound dry black eye peas
4 cups of vegetable broth
2 cups of water
1 large onion
4- 5 stalks of celery
4- 5 carrots
6-7 cloves of garlic
1 bay leaf
1/4 tsp salt
1 tsp black pepper
1/4 tsp cumin
Put in the Crockpot for 6 hours!! Volia
Happy New Year!!Black eye peas

Wishing you a happy, healthy & prosperous New Year 2013!!!
